Welcome to The White Hart The White Hart is a collaboration of some of Sydney's most accomplished Chefs, Mixologists, Designers and Sommelier's. The word ‘hart’ is an archaic word for mature stag and the White Hart was Richard II’s personal emblem. The name became so popular as a tavern name during his reign and was adopted by so many inns that The White Hart at one time became a word in popular speech for describing any drinking house.
Food by Danny Russo (Italian Kitchen, The Beresford) Danny was awarded both a Chef’s Hat, and ‘Best Formal Italian Restaurant’ in the Restaurant and Catering Association Awards for three consecutive years at L’Unico Restaurant (Balmain) and more recently at Lo Studio he was awarded a Chef’s Hat, ‘Best Italian Restaurant’ and ‘Best New Restaurant Nationally’, elevating the restaurant to one of Sydney’s premier Italian Restaurants. Drinks by Grant Collins (Zeta, Manly Pavilion, Ku-De-Ta, Bali) Grant is the founder and managing director of cutting edge Sydney based bar consultancy company barsolutions. With the cocktail list he aims to offer a selection of homemade house tavern specials, timeless classics as well as modernised classics and progressive creations.
Wine by James Young (Buzo Wine Library, 360 degrees) James has worked as a Sommelier or consultant at The Summit Restaurant, Morans, Pruniers Restaurant, La Locanda, Amarcord, Emporio Armani Café and The Wine Library as well as spending 2 years as an assistant winemaker at T’Gallent Wines in Victoria. James is currently the National Sales Manager for Torbreck Vintners and has brought an internationally diverse yet approachable selection of wines to the White Hart.

Paul is a passionate and focused company director whose knowledge and experience in boutique developments, continually pushes the boundaries of the customer’s expectations. Paul’s style and multi disciplinary approach to the architectural fields make him a standout in the hospitality design industry and a valuable asset to any project.

Paul Kelly created Paul Kelly Design in 1997 after studying for 5 years obtaining both a Bachelor and Graduate Diploma in Landscape Architecture. Paul immediately opened his company and targeted retail design, incorporating live music (DJ’s) into clothing stores and quickly obtaining a name in the retail sector designing the ‘cool stores’. Paul then got offered the opportunity to work on a real music venue, a new nightclub called ‘Gas’ which since its opening in 1999 has had over 500,000 guests. From this point the opportunities in the hospitality market outgrew the passion for retail and Paul focused his attention solely on hotels, bars and restaurants. Paul has created a company now that is regarded as one of the top hospitality design firms in the country, with a myriad of boutique projects throughout Australia and Asia.

Paul is highly committed to the interior architecture profession, this year judging the UNSW final year students and being an integral part of creating the 2010 curriculum. Paul also was the judge in the IDEA (interior Design Excellence Awards) and was also nominated for his works within the hospitality sector 2009 and 2010. Through Paul’s hard work, in 2009/2010 the company has received 4 major Hotel awards and has been published in over 50 magazine editions.
Professionally Paul strives for a balance between operational design and visual aesthetic, but focuses the majority of his attention in the creation of a successful business model and the financial success of an operation. Paul continually pushes facilities to give the customer more, allowing spaces to continually grow and the industry as a whole to continually raise the bar.
